Cook in the oven with cider and chunky slices of cooking apple. When cooked keep the chops and apple warm while you add some double cream to the juices along with a little cornflour in water. Serve with jacket or new potatoes and green veg.
Rub Jamaican jerk seasoning on them before frying or grilling. Delicious! But use it sparingly. Depending on the brand it might have a quite high percentage of chilli pepper present!!!
Pork and peaches - a recipe I got from my mum-in-law. Can be done with pork chops or pork pieces.
Fry in a pan with onions. Add a crumbled pork stock cube and a splash of white wine. Add the juice from a tin of peaches and let it bubble for a few minutes before topping up with boiling water (use enough water to give you as much gravy/sauce as you want). Add the peach halves a couple of minutes before serving - only have the peaches in the pan for as long as it takes to heat them through. If they are in the pan for too long they start to break apart.
You can thicken the sauce with some cornflour if you wish.
Serve with baby new potatoes - yuummm!
