Eggless Cream Cakes

I have noticed that there are now cake shops that only sell eggless cakes, often to eat in.  I believe there is at least one chain of these shops.

Any idea why?  Surely there are not that many people allergic to eggs baked in cakes and many are made with cream, so are not suitable for vegans.  

I can understand a cake shop including a selection of egg free/dairy free cakes but not exclusively.

I am getting forgetful, I had just seen an advert for another egg free cake opening near me.

I will close this thread to save us from repetition but leave it as an example of my poor memory 😭
