Coconut Ice is really simple to make yourself.
COCONUT ICE:-
1pound cube sugar (Must use cubed)
�pint water
4ounces desiccated coconut
Cochineal
Dissolve the sugar in the water and then boil to a temperature of 240�F. Remove the saucepan from the heat , add the coconut and stir until the mixture thickens, then pour half into a greased tin. Tint the remaining mixture pink, using a few drops of cochineal, and pour on to the white layer.
Leave to set and then cut into bars.
