You're much better off using a metal tray as glass simply doesn't get hot enough. If you use the glass dish the results won't be as good.
BTW, good recipe from Delia. www.deliaonline.com/recipes/r_0000001030.asp
my mum used to make TITH using glassware and it was tops. as the glass doesn't get hot enough i think she used to bump up the heat 20 degrees hotter than normal - as soon as the batter goes into the glass (then into the oven) whackt he oven back down to normal temperature
Tried it with glass last night, it was pants, didn't rise at all, I think (as per darth vader's post) it just didn't get hot enough. Will try hotter or metal next time!
Buy a metal tray with a solid bottom so that you can keep the fat really, really hot by placing the tray on the hob when you're pouring the batter in. It's worth it.
I always use a huge glass casserole dish - I brown my sausages in a little oil first to make sure the oil is really hot and smoking - are you using 4oz plain flour, 2 eggs, and 1/2 pint milk (doubled for bigger dishes)? Some recipes only use 1 egg, which doesn't tend to rise so well.
of course you can... as long as you use lard for your fat and it's smoking hot before you add the mix...
Use 1 egg per 2ounces of plain flour... and try to use a mix of both water and milk.
Use all milk and it goes stoggy and water makes them too crispy.
